I took my pressure cooker out a few days ago for the first time in over a year to show my GF how it worked and why it was cool. That night we just made some steamed artichokes in it in about 10-12 minutes. But a few nights ago we both got home late, there was nothing ready-to-go in the fridge or freezer, so out came the pressure cooker. I had never tried to make soup before, in a pressure cooker or out of it, so I thought it might be fun. I looked in the canned food cabinet and immediately saw black beans, so black bean soup was what I made. I made the recipe up right out of my head, I think it came out pretty well. The whole thing took me 45 minutes. Here's the recipe, please let me know if you try it:
Recipe for Pressure-Cooker Vegan Black Bean Soup
3 regular-size cans of black beans (15oz per can)
1 large yellow onion, chunked 1"x1/2"x1/2"
3 large cloves garlic, lightly crushed
1 large turnip, peeled and chunked 1"x1/2"x1/2"
2 small or 1 large yam, chunked 1"x1/2"x1/2"
3 full celery ribs, rough chopped, with leaves
1 1/2 t ground cumin
1 1/2t salt
3/4t ground white peppercorns
10 whole white peppercorns
3/4t cayenne pepper
1 5qt or larger pressure cooker
Prepare all ingredients.
Put all ingredients in pressure cooker.
Bring pressure cooker up to pressure.
Set timer for 15minutes, start it going.
When timer goes off, release pressure, then remove lid.
Put contents of pressure cooker in blender or food processor and blend until smooth.
